On the eve of World War I, Greek immigrants began buying up the diners abandoned by German Americans facing anti-German persecution brought on by the war. In these kitchens, the new Greek owners would adapt traditional German travelers’ fare with a touch of the Mediterranean and a pinch of entrepreneurial spirit.
